*  ROAST BEEF TENDERLOIN – W. redwine demi sauce and horseradish cream sauce.

* ROAST TOP ROUND OF BEEF (serves 50) Both beef roasts served w. Au Jus and horseradish cream sauce


* SMOKED SUCKLING PIG – w. bbq sauce, slaw and flatbreads

* ROAST OR FRIED TURKEY – w. cranberry chutney and giblet gravy

* MASHED POTATO MARTINI BAR – W. accompaniments of  bacon crisps, sharp cheddar, sour cream, green onion, beef tender tips in merlot/demi sauce, caramelized onions, whipped butter.

* PASTA STATION – w. choice of penne rigate, farfalle, (or other pastas)

displayed in bowls for guest’s selection- * shrimp  * italian sausage * beef tips

* garlic spinach * grilled chicken  * mushrooms  * fresh basil  * sauteed peppers

* tomatoes      SAUCES- (CHOOSE 3)  Alfredo, Marinara, Roast Garlic Cream, Pesto, Garlic and Herb, Fradiavolo, tomato basil cream

* MARTINI RISOTTO BAR-  Creamy risotto w. * bleu cheese crumbles

*asparagus tips * green onion * beef tips in demi cream sauce * garlic spinach

* sauteed shrimp or lobster * roasted mushrooms

*BBQ STATION- Slow smoked pulled pork, smoked beef brisket, smoked pulled chicken, potato salad, slaw, yeast rolls

*BAYOU STATION – * Smoked chicken and andouille or seafood gumbo,

* Crawfish etoufee,  jambalaya ( smoked chicken/andouille sausage or crab/ shrimp)

Red Beans and Rice , Crab Cakes w. remoulade  * jalapeno/cheddar corn bread

* SOUTHERN LOVE STATION#1. Cast Iron Skillets frying Green Tomatoes and Okra. , corn muffins, sweet potato biscuits, remoulade sauce, lemon wedges

#2.- Southern Fried Chicken , Fried Catfish, Hushpuppies, potato salad, cheese grits, cole slaw.

*GRIT CAKE STATION – WITH- *hot blackeyed peas  * tomato/ corn relish

* pico de gallo * sharp cheddar  * green onion * sauteed shrimp * green onion

* andouille sausage

*SOUTHWEST/ TEX MEX STATION – * quesadillas  * mini tacos * mini enchiladas  * black bean chili  * sour cream * guacamole * sour cream, pico de gallo * lettuce, tomato, diced jalapenos

*STIR FRY STATION- Guests select from bowls of   * onion, * bok choy

*mushrooms  * carrots * snow peas * ginger * sliced beef, chicken, shrimp

*water chestnuts  *steamed basmati rice  – Wok fried w. sesame and ginger infused oil. *  SAUCES- Kung Pao, Szechuan, soy ginger
